What is Kombucha?


Kombucha is a sweet-and-sour fizzy drink made from fermenting tea. It was used for thousands of years to help treat all types of ailments. First introduced in Ancient China around 2,000 years ago; at the time the drink was referred to as the Tea of Immortality. In modern times, Kombucha has been sprouting up all around the world as a natural soda replacement and rich source of probiotics. 


How is it Made?


Kombucha is made through a fermentation process of tea, sugar, and a symbiotic culture of bacteria and yeast known as a scoby. Much like yogurt making, the process occurs through the bacteria and yeast acting upon the sugar to produce a fizzy drink. The greater the time the better the fermentation and resulting in a good for you product. Unlike yogurt making, high quality Kombucha takes approximately 30 days to be produced.


Health Benefits


Advocates of Kombucha say that it helps with digestion, immunity, liver function, and helps you lose weight, as well as ward off high blood pressure and heart disease. Claims for these come from the fact that probiotics are a natural part of the Kombucha fermentation process. These probiotics help to strengthen the microbiome and support the diversification of bacteria in the gut. Probiotics are key when it comes to strengthening your immune system, which in-turn helps ward off illness. Probiotics also help with bouts of Irritable Bowel Syndrome (IBS) as well as diarrhea. When Kombucha is made from a blend of green and black tea, there are other health benefits that are created which are the byproduct of the present antioxidants  and polyphenols found in the tea; these include a reduction in blood sugar levels, cholesterol, and increased fat metabolism or fat burn.
